PorcSalt, Guanciale and Bacon

I was given 2 hunks of PorcSalt products. 1 slab of bacon and one of guanciale. I sampled them both and the quality is super and the flavor excellent. The guanciale has made it into today's savory tart. The tart is composed of organic farmstand leeks, Claudio's ricotta, mascarpone, fresh herbs and Tap Root eggs. The shell is Daisy Mills flour, leaf lard, Shankstead butter, Fleur de Sel.
